This 40-day period leading up to Holy Week commemorates, according to Christian tradition, the 40 days Jesus spent in the desert. <\/p>\n\n<p class=\"wp-block-paragraph\">Abstinence from meat symbolizes recollection and renunciation, so fish and stews take on a special role at this time of year.
