We have some friends coming over to visit who are strict vegetarians (no fish). Can anyone recommend either a vegetarian restaurant or a restaurant that has a selection of vegetarian options?

Thank you for all the responses. We took our guests to the Restaurante Vegetariano in Torrevieja yesterday evening. We were all impressed (even the meat eaters) with the quality of food and the service and would throughly recommend this restaurant to anyone wanting something a bit different.
